On the Third Day of Christmas…we made Homemade Oreos!

This next batch of cookies was also made at the Cookie Party we had with my friends while I was visiting California (just like the Peanut Butter Blossoms and Snowballs).  This is one of those recipes where news travels like wild fire.  Last year, our friend Megan brought these cookies to Cara’s housewarming party.  Cara thought they were nothing short of awesome and decided that we had to make them this year at the Cookie Party.  And boy, these cookies did not disappoint!  I love me some oreos!

Megan (who sadly couldn’t make the party :() got the idea via Cupcakes and Cashmere who got the recipe from here.  And that is the same recipe we used to make these cute little cookies.

If you are looking for a healthy holiday cookie…this is not the cookie for you!  Butter AND shortening and a LOT of sugar.  But as Cara said, more is more when it comes to sugar. 😉

Ingredients:

For the chocolate cookies:

  • 1 1/4 cups flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups sugar
  • 1 1/4 sticks unsalted butter, softened
  • 1 large egg

For the cream filling:

  • 1/2 stick unsalted butter, softened
  • 1/4 cup shortening (we used butter flavored Crisco sticks)
  • 2 cups sifted powdered sugar
  • 2 teaspoons vanilla extract

Preheat your oven to 375 degrees.

In a stand up mixer, put in the flour, cocoa powder, baking soda, baking powder, salt, and sugar.  Mix the dry ingredients on low.  Here’s an action shot.

Next, add the butter (if you forget to soften it on the counter, you can defrost it in the microwave on 50% power, but only do 5 second intervals until soft…don’t melt it!) and the egg and mix on low until it forms a large ball of dough.  Transfer to a bowl.  Note the iPhone in the background…this supplied the Christmas music via Pandora.  :)

Clean your mixing bowl so you can make the cream filling.  Sift the powdered sugar into the mixing bowl.  Just a side note, I bought a hand sifter for myself recently…you know the kind where you squeeze the handle over and over?  But, honestly, just using a mesh colander like the one we used here is much easier and faster…but, it won’t give you the killer right forearm that my sifter gives me.  😉

You can tell we had a lot going on at this point in the cookie party since we were three batches of cookies in…and probably a few glasses of champagne in, too! :)

Pour the sugar into the sifter and tap the edge until it all sifts through.  (We put the butter and shortening in first to let them get cozy 😉 .)

If you haven’t already, add the butter, shortening, and vanilla. Now, beat until fluffy.

If you are fancy enough to have a piping bag, you can spatula the filling into one of those.  We aren’t that fancy, so we just used a ziplock bag and then twisted it to squeeze the filling into one of the bottom corners of the bag, like so.  (How do you like my grey nail polish, btw?  I figured I wanted to try something new. :) )

When you are ready to assemble the cookies, you just simply snip the tip and pipe it out.  Easy peasy.

At this point, Cara and I took a little break to take pictures of each other taking pictures with our Nikon sisters…like I said, a few glasses of champagne in. 😉

Isn’t her apron so cute?  I made it for her.  :)  And I love her watch…she’s so stylish.  I’ll have to remember to get the picture of me that she took someday.

Ok…enough of this break, time to get back to work.  And I actually did get put to work here instead of just playing photog.  Measure out a teaspoon of the chocolate dough.

Then roll into a ball.  (Be sure to wash your hands before you do this 😉 )

Place the dough balls onto a baking sheet about an inch apart.

We filled two cookie sheets with these bad boys.  The recipe instructs you to use parchment paper, but these non-stick baking sheets worked just fine.

Time for the oven, little guys…Does anyone else think they look like little soldiers all standing at attention?  I know, I’m weird.

Bake for 9 minutes, and rotate the pan halfway through for even baking.  I had never heard of this before, but we did it and they baked evenly, so I guess it was a good thing.

Let the cookies cool on a rack.  I thought these cookies looked pretty delicious even without the filling.  As a side note, I’m sure these would be really good for making ice cream sandwiches.  Just make the cookies a little bigger and some yummy mint chocolate chip ice cream…sorry, I just drooled a little bit.

When the cookies are cool, it’s time to get the assembly line going.  And by “assembly line” I mean Cara and Emily.  :)

After you snip the tip of the bag, pipe a little bit of filling onto one cookie.

Then smoosh another cookie on top until the filling squeezes out just a little bit.  And yes, it will likely take two people and three fingers to properly smoosh the cookie.  😉

These cookies are not soft, they have a bit of a crunch just like a real oreo (only totally better!) so they would be great to dip in a cool glass of milk.

I thought they were great all on their own too.

So yummy and so cute!

The filling tastes almost just like a real oreo only softer and less formed looking.  When I was little, my sister didn’t like chocolate so she would eat all the filling out of the middle of oreos and then throw the cookie part away (crazy, I know)…she would probably love to just eat the filling from this recipe!

On the Second Day of Christmas…we made Snowballs!

These cookies are another bunch that go by different names.  I have always known them as Snowballs ever since I was a kid and my Grandma Fannye made them every Christmas.  I hear that they also go by Mexican Wedding Cookies…not sure where that comes from though.  Anyone know??

Traditionally, these guys are made with walnuts, but my bestie Jenna prefers pecans, so we switched it up.  They came out delicious!  And for those of you who like the semi-homemade stuff, this is right up your alley.  😉  We got the recipe from foodnetwork.com just like the recipe we used for the Peanut Butter Blossoms.  You can find the original recipe here.

To make this recipe you will need:

  • 1/2 cup oil (we used canola)
  • 1 1/4 cups oats (not instant)
  • 1 box of white cake mix
  • 2 large eggs
  • 2 teaspoons vanilla
  • 1/2 cup chopped pecans (we bought them already chopped from Trader Joe’s, and when I say “we” I mean Jenna & Cara 😉 Thanks hotties!)
  • about a cup of powdered sugar (to roll the cookies in)

First things first, preheat your oven to 350 degrees.

Next, measure out your oats in a liquid measuring cup.

Then pour the oil into the same cup and stir it all together.  You want the oats to absorb all of the oil, so let it sit for about 5 minutes.  These cookies don’t end up tasting very oaty…more just vanilla-y goodness, so I assume the oats are more for structure.

Next, pour the oats/oil, cake mix, eggs, vanilla, and pecans into a stand up mixer.  So, basically all the ingredients.  😉  This is one of the easier recipes.

Mix until well combined.

Doesn’t it already look yummy?  I’d tell you to sneak a bite, but I would NEVER “officially” advocate eating raw cookie dough for safety concerns.  Unofficially, it tasted really good!  😉

Next, you get to get your hands dirty…but, please wash them first. 😉  Roll the dough into approximately 1 inch balls and place them on an ungreased cookie sheet.  Unless of course, you are at a cookie party and your sheet is already pretty buttery from the other batches of cookies you’ve been baking.  Then, just go ahead and toss them on the cookie sheet. 😉

It’s a beautiful thing…

Bake for about 8 minutes.

While you are waiting for them to bake, pour about a cup of powdered sugar onto a plate or shallow bowl.  Cara has such pretty plates…

When the cookies are finished baking, let them cool just enough so you can touch them without burning your little fingers.  We just let them cool right on the baking sheet.

Then, roll each cookie in the powdered sugar.  It’s like one of those foam parties you went to in college only for cookies…and powdered sugar instead of foam…I never actually went to one of those parties, but I heard it was pretty disgusting actually. Awwwkward. :)

Now you can let them cool on a baking rack.

Now, normally I am a slightly bias towards anything with chocolate and these cookies are clearly lacking in that department, but they were really good!  It must have been the switch of pecans for walnuts…good call, Jenna.  :)

Oh, and remember not to inhale when you take a bite of these…that powdered sugar will go straight to the back of your throat every time.

~ New Traditions ~

Dane and I have been dating for about 4 years now, but this is our first year living together where we actually have a Christmas tree. I’m so excited! Even if it is a cheapy fake one (I explain where we got it here).

A couple of weeks ago we got one of those coupons from Kohl’s that is basically just a free $10 gift card. While Dane and I were meandering around trying to decide what to spend our $10 on (and not go over because we’re cheap like that), Dane came up with a great (and very sweet) idea! We decided to start a new tradition where we buy a new special ornament every year. We shopped around in the ornament section until we found one that we both liked and that we felt was uniquely different than the other ornaments we already have on our tree. We settled on this beauty…

The best part was that it was under $10…which means we got her for free. :)

In the photo it looks all silver, but it’s actually slightly purplely-pink and looks like it’s blown glass…very pretty. I plan on using a silver paint pen to write “DK 2011” very small somewhere slightly inconspicuous.

On the First Day of Christmas…we made Peanut Butter Blossom Cookies!

I thought I’d start the 12 Days of Cookies & Candies off with a bang…the always delicious Peanut Butter Blossom Cookies!  For the record, I have always loved these cookies, but never knew what they were called.  At our party we called them Thumbprint cookies, but apparently the “official” name is Peanut Butter Blossoms.  Honestly, I don’t care what you call them because these are freaking delicious!  Anything with an entire Hershey’s kiss on top is good in my book.

When I was back in California with my besties Jenna and Cara, we got the cookie party started off right with these guys.  The recipe we used was from here.

Ingredients:

  • 1/2 cup shortening (we used butter flavored Crisco sticks)
  • 1/2 cup peanut butter
  • 1/2 cup firmly packed brown sugar
  • 1/2 cup white sugar
  • 1 large egg
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 1 3/4 cups flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • about 1 cup white sugar (to roll the cookies in)
  • 1 bag of Hershey’s kisses, unwrapped

Oh, and if you really want to get into the holiday spirit, don’t forget the champagne!

Or egg nog, or wine, or beer…whatever floats your boat.  :)

Be sure to preheat your oven to 375 degrees.  Then, in a stand up mixer, cream the crisco, peanut butter, brown sugar, and 1/2 cup of white sugar.  Here’s us gettin’ started with the crisco and peanut butter.

Next, add the egg, milk, and vanilla extract.  Don’t forget to “stub your toe on the vanilla” as Jenna’s grandma always used to say. 😉  Beat all these ingredients together well.

Next, we used Cara’s super awesome measuring cups to measure out the the dry ingredients into a separate bowl.  Here’s a little demo of the cups.

I know…I was pretty amazed as well!  The cool thing about these measuring cups is that they are great space savers and can slip into any drawer.

So anyway, back to the dry ingredients…flour, baking soda, and salt all into the bowl.  Mix.

Add the dry ingredients to the mixer and mix on low until the dough becomes stiff.

When the dough was mixed, we scooped it into another bowl (we needed the mixer to get the next round of cookies goin’) and popped it into the fridge for a bit for the dough to stiffen up a little.

Meanwhile, pour some white sugar onto a plate.

Did anyone else immediately get that “pour some sugar on me” song in their head?  No?  ok, just me then.

Behold…plate o’ sugar.  Doesn’t Cara have the most beautiful plates?  They’re from Italy.  :)

When your cookie dough is ready, it’s time to roll some balls!  That sounded bad…it’s not.

Roll balls of dough (approximately 1 inch each) and then roll in the white sugar and place on the baking sheet.

Bake the cookies in the preheated oven for 10-12 minutes until they are golden brown.  While the cookies bake, unwrap the kisses.  You’ll probably need some help with this to get them all unwrapped in time…and try not to eat too many!

As soon as the cookies are done baking, take them out of the oven and push one kiss into the center of each cookie.  You want to make sure you do this when the cookies are still warm.

They look so, so delicious!

Let them cool on a wire rack.
